Butter Poached Lobster

Serves 6ppl


Ingredients:

 

2 lobster tails

 

1 package lobster stock

 

2 cups 35%MF cream 

 

2 tablespoons cayenne 

 

1 tablespoon Black pepper

 

¼ cup Kosher Salt

 

1 pound Butter

 

1 lemon

 

2 sprigs of tarragon

 

½ cup Flour

 

1 Cup white wine

Process:

Process Roux.  


In a saucepan over medium-low heat, add ½ cup of butter, when melted add flour and stir cooking out flour for 2-3 mins. When it turns a light brown turn to low and add the white wine, continue to stir with a whisk for another 2-3 mins


In a medium-large sauce pan or pot heat up lobster stock on medium-low. 


Slowly add stock a few cups at a time to the roux while stirring to avoid any lumps. When done add in Cayenne, black pepper and cream and stir. 


Process:


Butter Poached Lobster In a large pot, place lobster in boiling salted water and steep for 12 minutes. Remove tails and place in ice bath (large bowl or pot half filled with ice and water) to stop cooking process. Place lobsters on a cutting board and split in half.. (along the scored line on back of shell) Place lobsters in beurre monte (poaching liquid) over medium low heat and poach12-15 minutes.

Butter Emulsion (Lobster poaching liquid)100ml of water 2 Tablespoons of cream In a medium to large saucepan, bring water and cream to a light simmer. Slowly add and whisk in diced butter 8 tablespoons. over low heat, whisking continuously until butter is incorporated. Keep on low heat and reserve. 


Pull leaves off tarragon springs, roughly chop. Set aside.


Slice lemon in half. Squeeze ½ of lemon juice into bisque.
