Roasted Cod & Potato Bourride
Serves 6ppl
Ingredients:
12 oz of Fresh Crab Meat
8 Tablespoons of butter
6 Teaspoons of flour
10 oz Homogenized Milk
2 Egg Yolks
1 ½ Cups of shredded Gruyère Cheese, reserving ½ cup for garnish
¼ Teaspoon of cracked black pepper
¼ Cup of sliced green chives
1 Teaspoon of Worcestershire sauce
1 Teaspoon of Paprika
1 Cup of breadcrumb / panko
Kosher Salt
Process – Béchamel:
In a medium saucepan melt butter over medium heat, add flour and stir until combined and lightly browned, 3-4 minutes.
Process – Crab au Gratin
Preheat Oven to 425 degrees
Off heat, add warm milk and cheese to the above mixture and slowly incorporate egg yolks, pepper, chives, paprika and worcestershire.
Gently fold in crab meat. Reserving larger pieces for garnish.
Place mixture in heat proof dish(s) / crab shell(s) and garnish with large crab pieces, breadcrumbs, and reserved cheese.
Place in oven under broiler and broil for 4-5 minutes until golden brown.
